The traditional Marches cuisine contains a strong confectionery tradition. Among the most famous sweet marchigiani we find the castagnole, balls of sweet dough to fry in oil and lard and sprinkled with powdered sugar, calcioni, ravioli of bread dough filled with pecorino cheese, eggs, sugar, and lemon peel, donuts to the must, also called donuts of lean meat, specialty of Ascoli Piceno prepared during the harvest, with white flour, anise seeds, oil, sugar and freshly squeezed grape must, all mixed with yeast, the lonzino di fico, poor dessert that was prepared in late summer to be consumed in winter because it did not create problems of conservation and was usually given to children on the occasion of the Epiphany.
